Expressing creativity via cooking is not only a form of entertainment for me but also a method of self care for me. So using my imagination, being able to eat, and it look nice for me is a good time. I usually will make breakfast burritos or tacos with the left overs but one morning I really wanted to impress the person I was making breakfast for so I came up with this lovechild of a tostada, Mexican pizza from Taco Bell, chilaquiles, and a quesadilla.
