No comments: Thursday, July 9, 2015 Cow Appreciation Day July 14th at Chick-fil-a - DIY Cow OutfitIn anticipation for Cow Appreciation Day at Chick-fil-a, my daughter and I have been busy putting together a quick, easy, and fun shirt.

For those of you who don't know, if you you visit your local restaurant on July 14, you can get some free food! Just dress up in your best cow attire!

Fully dressed as a cow means an effort to be dressed like a cow from head to toe. Partial cow attire means just a cow accessory such as a cow-printed hat, vest, or purse. People dressed in partial attire will be awarded an entree vs a full meal. So put your A game on so you score a whole meal!

So for my little Maddie she (well I) decided we would work on our own little costume and dress her up as a little cow. A mini cow onesie will also be made for baby.


I rounded up our materials (below). Basically just had to run out and purchase some black felt and glue, as we already had everything else at home.



First we cut out a bunch of odd shapes to make our cow spots and placed them on the shirt before gluing so we could see how many spots we needed. We placed them in no particular pattern, just where ever Maddie decided they would land.



Next we glued them in place using some felt glue.






We let the shirt dry for about an hour before handling our finished product. I think she did a pretty good job. We will pair this with some black leggings and use the thick black pipe cleaner as her ears. With the blank white piece of paper, string, marker, and red pencil we will be making a sign for her to place around her neck that says their tag line "Eat Mor Chiken". No comments: Wednesday, June 24, 2015 Hungry? Chicken Tinga Slow Cooker TacosSo I've been home a while and just discovered my love for my slow cooker. I've had since I got married, but rarely used it until now.

This a yummy recipe. I love the chipote's smokey flavor!


What you'll need:

Slow Cooker

2-3 skinless, boneless chicken breast halves
1 chopped onion
1 can of tomato sauce (15 oz)
1 can of chipotle chile peppers in sauce, seeded and chopped (7 oz)
1 large jalapeño pepper, seeded and chopped
2 cloves of garlic, minced
1 tsp oregano
1 tsp ground cumin
1 tsp chili powder
1/4 tsp red pepper flakes
1 tbsp salt

1 dozen tortillas or tostadas depending on your taste



Add chicken and all of the above ingredients (minus tortillas/tostadas) to the the slow cooker and mix.

Cook on Low until chicken is no longer pink in center, about 2-3 hours.

Remove chicken and shred using two forks.



Return to slow cooker and cook on low for an additional hour.



Now that you are done you can add to your tortillas or tostadas and eat! You can also add a little extra toppings if you like. I like to add sour cream, queso fresco, tomatoes, and a bit of lettuce. I can eat this meal for days. If you want your meal to have more of a spicy kick go ahead and add an additional jalapeño!





No comments: Home with Baby - Month 2Has it been two months already?! Having a baby and a toddler at home really makes the time tick by faster. I don't know how other mom bloggers do it, what's your secret? I have no energy, but hope to get it back soon.

Now that baby is older my days have consisted of less naps and more errands. I once again live at Target! LOL. It's my escape. But I've learned to control my impulse purchases from there, going with a list and only buying what's on it. (Of course if I see something I like I just add to the list for next time, ha)!

Getting back to working out has been a little harder this time. I still get my toddler ready for day care and immediately try to go back to sleep soon after as long as baby stays asleep. That gets me about an extra hour on a good day. But starting next week I'll be staying up and baby and I will be going for walks. Lets get back to at least 10,000 steps a day. I see many zoo trips in our future. And then hopefully soon after I can start going for either morning or evening short runs.

I'm also looking forward to shopping for wardrobe essentials as I head back to work in about 4 weeks. That will either be fun or stressful depending on baby's mood. I'm basically donating most of my current wardrobe and starting fresh. A well deserved treat, as I feel I've owned my current wardrobe since before I got married.

And now it's time to get back to household chores. Crazy how it takes me all day to get them done, but while I was working 8 hours I could get them done when I got home. Must be a state of mind thing, since I know I have all day (kinda, not really, I do have a baby to feed every two to three hours)!

No comments: Wednesday, May 13, 2015 Welcome To The Newest Member Of The Family! It's been a crazy couple of weeks. The last couple of weeks of the pregnancy was very exhausting especially having a toddler. For a while there I was stressing out because I had been scheduled for a C-section due to a low lying placenta. Luckily my doctor decided to do one final ultrasound the day before and we found out that it had moved and no C-section was needed. This would've been at 37 weeks so needless to say the next three weeks felt very long. I felt like the day would never come. I finally went into labor at 39 weeks six days, one day shy of 40 weeks. As with my first it was a pretty fast delivery. Contractions started at about 4:30 AM, water broke around noon, and the baby arrived at 3:30 PM after only pushing for about 10 minutes (about three sets of pushes). I opted for the epidural which felt like forever before they gave it to me but it sure felt good after receiving it making it easier to deliver. Thank you Science!



Our baby girl Olivia came into the world weighing 7 lbs. 14 oz. and measuring 20 inches. She was a lot bigger than I thought she would be and about double the weight Maddie was. Maddie has adjusted very well to being a big sister.






After three weeks I'm finally getting my energy back and I can't wait to get back into shape. Happy to say baby is breast-feeding wonderfully and I know that's helping with the weight-loss. After gaining almost 30 pounds I have only six more pounds to lose to get back to prepregnancy weight.



This Mother's Day was wonderful. I was spoiled by everyone. Love my necklace from the hubby. MO for my little girls. I was also surprised by the my godmother who flew in from Arizona to visit family. So glad she got to meet baby Olivia.
