We at Fisher Farms grow our Milkfish in the pristine waters of Pangasinanin the northern Philippines. Milkfish grown in salt water are found to havesweeter, more flavorful, firmer and cleaner flesh. The fish are fed with theright amount of protein and nutrients at every stage of their development.We conrol the diet of our catch precisely because we make all their foodourselves, using 100% high protein feeds. This ensures the all-important high quality fish meat connoisseurs look for in first class milkfish. Ourmethods are also environment-friendly because we use just the right amountof feeds-there's no excess feeds coming from our cages. Our fish are readyfor harvest only after about 4 to 5 months, when they've reached the peakof flavor and meatiness.
Harvest time is one of the mos crucial moments in the journey of fish from the farm to the tip of your fork. Fish meat is actually quite delicate and tender, so how well the fish are handled, chilled and transported directlyaffect freshness and quality. Fisher Farms takes every effort to maintain thequality of the fish right our of the water. We put our fish in chilled watertanks which maintains the delicate cold chain. This not only ensures that the fish are chilled evenly to preserve freshness, but because the fish floatfreely in the water, they aren't compressed or compacted in any way so the fish get to the processing plant as firm and as wholesome as can be.
Our staff are trained to sort the clean fish with as little handling as possibleto preserve the firmness of the flesh of the fish. The entire working environmentin the processing plant is chilled to 5 degrees celsius, which is very good forthe fish completely fresh and helps preserve the meat tesxture, withour causingany damage.
Having a 5 degrees celsius working environment is crucial in keeping the freshnessof the fish. The freezing point of water is zero degrees celsius and becausewater expands when it freezes, it causes cells in animal tissue to rapture. Now,most facilities use the blast freezing method, which takes 4 to 6 hours tocompletely freeze a batch of fish to sub-zero temperature. This slow freezinggives time for large ice crystal to develop inside the flesh tissues and cause physical damage to the tissue cell structure, affecting both the texture and fllavorof the cooked product. Fisher Farms, on the other hand, use a far gentler kindof chilling - the Individual Quik-Freezing Process or IQF, which is them most unique feature of this facility. The Individual Quick Freezing process or IQFwas developed in Europe to quickly chill fresh fish down to the ideal temperatureof 5 degrees celsius in as little as 30 minutes. The IQF process makes a bigdifference i n keeping the freshness and wholesome taste of all Fisher Farms fish.
Once the fish have their freshness sealed in by IQF, the flavor are then put in. World class smoke house, a high tech processing plant and spices from all overthe world make Fisher Farms lead the rest when in comes to flavor and taste.All our fish products are vacuum packed to seal in the freshness, and in established retail and institutional sizes. Milkfish is low in sodium, It is also a good source of vitamin B6, Phosphorusand Selenium, and a very good of Protein, Niacin and Vitamin B12.

The Bangus or Milkfish is considered the national fish of the Philippines.It is the only living member of a long existing family of fish (Chanidae)that speaks well of its resilience with the time. Milkfish and Milkfish farming are very important to the diet and economy of the country wheremilkfish farming was said to have started even before the 17th centuryand its dominance its predicted to continue as such through the comingmillenium.
Milkfish grown in salt water have flesh that is sweeter, more flavorful,firmer and cleaner, thanks to the pure, highly oxygenated water. With fewermicro-organism contaminating the flesh, the fish also have a longer shelflife when harvested. Both are practiced in the milkfish farming in the country.
The first culture of bangus started as trapping enclosures along the coasta method which did not require artificial seeding. in the 1920's and in 1930's better built encolsures or ponds and water gates came about. Naturalfood was promoted in the culture pond during the period of 1940's and 1950'sbut significant development in bangus pond technology occured in the 1970'swhen the educational system grew considerabley. Large investment have beenmade in and around the country in terms of infrustructure, credit, researchand training in support of the milkfish industry. The SEAFDEC AquacultureDepartment was established in the Philippines to find solution to aquacultureproblems, government agencies and fisheries institution were also fielded inin the national effort to intensify milkfish farming. The methods learnedadapted consisted of the use of better-engineered and shallower ponds, application of organic and inorganic fertilizers, growing of natural food and management of water supply. These adaptation coupled with Philippine innovations of the modular layout and management of ponds to effect stock manipulation and increased stocking rates raised production of milkfish inthe country.
